Cauliflower gratin with cheese and nuts

Cauliflower with a cheese sauce under a crispy layer with nuts. This side dish for 2 people takes about 30 minutes to prepare.

Preheat the oven to 200 degrees. Cook the cauliflower florets 6 minutes in a pan with water. Melt the butter in a saucepan. Add the flour and mix into a roux. Pour the milk after 2 minutes little by little and stir to a smooth sauce with a whisk.

Let the cheese melt in it. Put the cauliflower in an oven dish and pour the cheese sauce over it. Sprinkle with some panko or breadcrumbs and the coarsely chopped nuts. Put in the oven for 10 minutes until it starts to turn brown, you can also switch on the grill.


  • 400 gr of cauliflower
  • 10 gr of butter
  • 15 gr of flour
  • 150 ml of milk
  • 50 gr parmesan cheese
  • 1 tablespoon breadcrumbs or panko
  • 1 tablespoon walnuts
  • 1 tablespoon of pecans
